This acronym stands for ‘modified atmosphere’ where a mix of gases (azotes and carbonic anhydride) and once the air has been aspired it gets inserted into the package.

In this way, the package becomes air-tight, which keep no longer in contact with the air. This avoids the spread of bacteria.
